Est. 1957 · Hita, Oita
Seared on the iron griddle. The original yakisoba.
What is Soufuren-yaki?
The heat of the griddle,
for all of Fukuoka.
1957 Born in Hita, Oita
Hita, 1957. A craftsman named Yasuchika Sumi created a dish no one had made before: noodles grilled on an iron griddle. Today the word yakisoba is everywhere, but at the time it was a radical new dish. That was the beginning of Soufuren-yaki.
Noodles seared crisp on both sides. Crunchy bean sprouts that lift the flavor without getting in its way, mildly sweet green onion and generous pork. All of it is finished in one fierce burst of heat with the secret sauce the founder Yasuchika perfected through trial and error.
We do not call what is generally sold as yakisoba by that name. We are a company of craftsmen who face the griddle every day with the pride of having made the first true yakisoba.
